It’s official, so let me be the first to say it: Happy Summer to all my Juniper Berry friends and family out
there! In this edition of the Berry, I am paying homage to Mediterranean & Middle Eastern cuisine. I am sharing with you the most savory and delicious kabob recipes that I absolutely love to enjoy! We are going to be cooking 3 different kinds of kabobs today: Pork, Chicken & Beef. I am also including a super simple and delicious recipe for a great tzatziki sauce that goes great with these delectable kabobs.

Ingredients List:
• Pork Tenderloin, cut into 1 1⁄2” cubes (I always ask my local butcher to do this as it saves a great amount of time)
• Chicken Breast (Prepared the same way into 1 1⁄2” cubes)
• Beef Filet Mignon (I know, but trust me it makes an
amazing kabob! Also prepared in 1 1⁄2” cubes)
• Vidalia Onions & Red Bell Peppers (Cut these into pieces slightly larger than the meat)

Supplies List:
• Bamboo Skewers soaked in water for 3 hrs.

Accoutrements:
Tzatziki Sauce

In a food processor add:
2 Cucumbers peeled, seeded and squeezed of excess water. Break them down, next add 16 oz. of Greek yogurt, 3 peeled Garlic Cloves, 2 TBSP of Extra Virgin Olive Oil, 1 TBSP Fresh Dill, Juice of 1 Lemon and salt and pepper to taste. Let chill 1 hr. before serving

Pita Bread
Olive Oil, Kosher Salt and Rosemary in bowl and brush on the pita bread. Grill lightly and serve with your kabobs.

***Skewer your kabobs as follows: 2pcs of meat to a piece of pepper and onion and repeat as follows for all the different kabobs you make!

Kabob Preparation:
Pork Kabobs
In a bowl mix:
• 3 TBSP Extra Virgin Olive Oil
• 2 Pinches of Cumin
• 1 TSP Cracked Black Pepper
• 1⁄2 TSP Onions Powder
• 1 TBSP Garlic Powder
• 1 TBSP Kosher Salt
• 1 TBSP (McCormick Italian Seasoning in the grinder if you can find it, if not pre-ground is fine.)
To prepare, marinate your pork cubes and skewer. Let marinate at least 2-3 hrs before placing on a very hot grill until the outside is slightly charred and the vegetables are beginning to lightly roast. Serve with your lightly toasted and seasoned pita and fresh tzatziki sauce.

Chicken Kabobs:
In a bowl mix:
• 1 Cup of Extra Virgin Olive Oil
• 1⁄2 Cup of Lemon or Lime Ponzu Sauce • 1⁄4 Cup Fresh Squeezed Lemon Juice
• 2 TBSP Sesame Seeds
• 2 Cloves Minced Garlic
• 2 TSP Garlic Powder
• 2 TSP Onion Powder
To prepare, marinate your chicken breast cubes and skewer. Let marinate at least 2-3 hrs before placing on a very hot grill until the outside is slightly charred and the vegetables are beginning to lightly roast. Serve with your lightly toasted and seasoned pita and fresh tzatziki sauce.

Filet Mignon Kabobs:
In a bowl mix the following ingredients: • 1 Cup Extra Virgin Olive Oil
• 1 Cup Soy Sauce
• 1⁄2 Cup Fresh Squeezed Lemon Juice • 2 TBSP Dijon Mustard
• 1 TBSP Worcestershire Sauce • 2-3 Cloves minced Garlic
• 1 TSP Cracked Black Pepper • 4 Minced Sage Leaves
• 2 Pinches of fresh chopped Rosemary
• 1 TBSP Kosher Salt
To prepare, marinate your fillet mignon cubes and skewer. Let marinate at least 2-3 hrs before placing on a very hot grill until the outside is slightly charred and the vegetables are beginning to lightly roast. Serve with your lightly toasted and seasoned pita and fresh tzatziki sauce.
